Potato pancakes are an easy and delicious dish. They are a family favorite. My children enjoy helping me prepare the potatoes by grating them, and then adding flour, salt, pepper, turmeric powder and onions. I fry them in a pan with oil until lightly browned on both sides.

 

The size of the potato pancakes can vary from 4-inch round cakes to large thin rounds or ovals up to 10 inches in diameter. If you prefer a crispier texture without frying too long you can use a non-stick skillet coated with cooking spray or olive oil instead of using more fat for frying

 

One of my favorite dishes to make is potato salad. I usually use red skin potatoes for this recipe. I boil the potatoes until they are fork-tender then cut them up into bite-sized pieces. Next, I place the potatoes in a bowl and add onions, diced celery, salt, pepper, mayonnaise and vinegar.

 

Here is a simple recipe for roasted potatoes that do not require oil.

 

Preheat oven to 425 degrees Fahrenheit. Remove the stems from the potatoes, cut them into wedges, and place them in a bowl with salt, pepper, and olive oil (or any other oil). Cover the bowl with saran wrap and microwave on high for 10 minutes or until they are fork-tender. After this time, remove the bowl and mix well with a fork. Line your pan with aluminum foil and add crushed dry corn flakes or oatmeal to coat it. Place potatoes on top of the foil-covered pan in an even layer, making sure they each have an individual touch of the flour mixture as they bake until lightly browned - about 20 minutes

 

Mashed Potato Tacos are a fun and unique twist on the traditional taco. It's quick, easy, with low-fat and low-carb options. The recipe is simple. Blend potatoes until they are smooth, then add cumin, garlic powder, onion powder, salt and pepper to the potato mixture. After this, mix in some salsa (or other toppings) and eat it like a taco!
